Hakata is a historic district of Fukuoka, Japan — a port city with over a thousand years of history as Japan's gateway to continental Asia. Hakata-style ramen is defined by its rich, creamy tonkotsu broth, thin straight noodles, and the tradition of kaedama — ordering extra noodles to finish your broth.

What makes the broth special?

Our signature Hakata tonkotsu broth is simmered for hours using pork bones, producing a rich, creamy texture with deep umami and a subtle natural sweetness.

Are the noodles made in-house?

Yes. Kouchan Ramen prepares its noodles fresh in-house using a specially developed flour blend. The thin, straight noodles are aromatic, slightly chewy, and deliver the firm bite characteristic of authentic Hakata-style ramen.

What is tare, and why does it matter?

Tare is the seasoning base added to the broth — the element that defines the final flavor of a bowl. Our tare recipe has been passed down since the founding of Hakata Ikkousha and is the defining secret behind Kouchan Ramen's distinct taste.
